Recipes For Two Servings
How can I cut this recipe down to just 1-3 servings?
INGREDIENTS:
* 2 cups cake flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup butter, softened
* 1 cup sugar
* 3 large eggs, room temperature
* 2 teaspoons vanilla
* 3/4 cup milk
PREPARATION:
Preheat oven to 350°F. Grease and flour 2 9-inch cake pans.
In bowl, combine flour, baking powder, and salt with a wire whisk.
Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.
Bake for 20 to 25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.
For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.
I don't want two separate cakes.
I have baking pans of all different sizes.
If i cut all the ingredients in half or even 1/4, how long and at what temperature should it bake?
1/4 c flour
1/4 tsp baking powder
dash salt
1 T butter, softened
2 T sugar
1/2 egg (stir the whole egg together, measure and use half)
1/4 tsp vanilla
1 T + 1/2 tsp milk
I would use a very small cake pan (if you have those mini-bundt or mini round pans or use a single-serving Corningware dish. That will serve 2-3. Bake at 350 for 20-25 minutes and start checking from there.
Here are a couple of dessert recipes that serve 4 or 2 larger servings:
BROWNIE BITES
2 T mayonnaise
2 T cold water
1/4 tsp baking powder
1 T chopped nuts
1/4 tsp vanilla
1-2 tsp powdered sugar
1/4 c flour
3 T sugar
1 T unsweetened cocoa powder
Combine the mayonnaise, cold water and vanilla. Sift together the flour, sugar, cocoa powder and baking powder. Add to the mayonnaise mixture, sturring until well mixed. Stir in the chopped nuts. Spray a 4 1/2 x 2 1/2 x 1 1/2 loaf pan with cooking spray. Pour batter into the pan. Bake at 350º in toaster oven (or regular oven) for 20-25 minutes or until done. Cool thoroughly. Remove from pan. Cut into four bars. Sprinkle powdered sugar on bars.
(I bake this in my one-serving Corningware dish)
APPLESAUCE SPICE CAKE
1/4 c + 2 T sugar
3/4 c flour
1/2 tsp vanilla
1/2 egg
2 T butter
1/4 c plus 2 T applesauce
1/2 tsp cinnamon
dash nutmeg
1/4 tsp cloves
1/4 tsp baking soda dissolved in 3/4 T hot water off
1/2 c stewed raisins
Beat the butter and sugar together. Beat in the egg. Add the applesauce. Sift together the flour, cinnamon, nutmeg and cloves and add to the applesauce mix. Add the soda in the water and the raisins (you can also add nuts if you like). Bake in a 350º oven for 50 minutes in a sprayed pan (again I use my Corningware dish).
When I make the Applesauce cake, I buy the Junior size baby food applesauce because that will make exactly 2 recipes without having a large jar of applesauce going bad in the fridge.
