Diabetic Dessert Recipes

I want to bring a "sugar free" dessert potluck 99 birthday of my grandmother (I am diabetic)?
Does anyone know of any recipes very easy to make tasty tasty treat. Just going to use Splenda in place of sugar. Every year there are so many sugary treats potlucks and parties. This is torturous for me and I refuse to feel excluded from this year. I need something for diabetics that will blow away my cousins. Please send me your best recipe. Thanks beforehand
Well I just saw a book of SPLENDA ASILES at check out in grocery stores. I have found to have left, but you can try this or one of these would good. It is also a dessert book Splenda. Pumpkin roll with cream cheese filling: "just made this Saturday anmd was incredible. Cake: Pam or other cooking spray stick and 3 large eggs at room temperature 1 / 2 cup granulated Splenda or Splenda for Baking 1 / 4 cup light corn syrup 3 / 4 cup solid pack canned pumpkin, 1 teaspoon fresh lemon juice 1 / 2 teaspoon baking powder 3 / 4 cup flour 1 teaspoon baking powder 1 / 2 teaspoon salt 2 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1/2-1 teaspoon ground ginger 2 tablespoons confectioners' sugar for rolling the cake decorating and more to want. Cream Cheese Filling: 1.8 oz package nonfat cream cheese at room temperature 4 tablespoons softened unsalted butter-1 / 2 teaspoon vanilla 1 / 2 cup granulated Splenda or 50/50 mixture of baking 1 / 2 cup "powdered sugar" (mixture of 1 / 2 cup Splenda and 1 teaspoon cornstarch in blender and pulse until the dust) Position rack in the center of the oven and preheat oven to 350. Lightly spray a 15x10x1-inch Jelly Roll pan with cooking spray. Line bottom of pan with waxed paper or parchemtn. The Grease and flour paper parchemtn well. To make the cake: beat the eggs in a large bowl with electric mixer until tripled in volume of minutes (about 5). Gradually beat in 1 / 4 cup Splenda, corn syrup and beat for 2 minutes. Reduce speed to low and gradually add the lemon juice, and pumpkin, beat until well combined. 3.Sift together flour, cinnamon, nutmeg, ginger, salt and baking powder, slowly mixing in four times the mass pupmkin. Using a metal spatula (spatula decoratoe cake or even a butter knife) and spread to evenyl the pot. BBake at 350 for about 12 minutes or until it pops when pressed back int the middle finger. Let cool for 2 minutes. EGDE Kife Pan Run around to release the sides.Sprinkle confectioners sugar over a cloth clean kitchen. Invert and unmold the cake onto towel. Peel off the paper and then replace it, roll cake and towel from the short end. Cool seam side down to cool completely. To prepare the filling beat the cream cheese, butter, and in the middle vainll until well combined. Add the Splenda and "powdered sugar" beating until blended and smooth. To assemble the cake and discard the paper unrolled. Cream cheese filling over cake and roll again. Transer to a serving platter, seam side down and a slight stretch anglle diagnal. ----------- Classic Cheesecake with Splenda: Bark: Pam 1 1 / 4 cuups Grahm crumbs 4 tablespoons unsalted butter biscuit, melted Filling: 3-8 ounce pkgs cream cheese softened 1 cup Splenda 1 / 4 cup milk 2 tablespoons flour 2 teaspoons vanilla 2 teaspoons grated lemon peel, 3 eggs LG temperature room Position rack in center of oven. Heat to 350. The thin layer of a spring form pan 9in PAM. Mix crust ingredients together Med in a bowl until moistened. Click on the bottom and 1 / 2 on the sides of the pot. Bake until lightly brown, 10 minutes, let cool while making filling and reduce heat to 325. Beat cream cheese in LG bowl until creamy, gradually eating into the Splenda, then milk, then flour, vanilla and lemon zest. Scrapin the sides of the bowl regularly. Mix only until the mixture is at a time smooth.One add eggs, mixing just until everyone is Incorperated. Pour into cooled crust and smooth top. Bake until filling the sides are slightly swollen and the center is almost set (50-60 min). Transfer to a wire cooling algae, run knife around edge of cake detachment cheese. Completlely Cool and then cover with plastic wrap and refidgerate. Sdies Remove from pan and cut into wedges. ---------- Coconut Cream Pie: 1 cup sweetened shredded coconut divided Filling: 3 / 4 cup Splenda 1 / 3 cup cornstarch 1 / 2 teaspoon salt 2 1 / 2 cups milk 1% 2 lg egg yolks 2 tablespoons unsalted butter 1 1 / 4 teaspoon vanilla 1 / 4 teaspoon coconut extarct 1.9 inch reduced-fat Grahm cracker crust Heat oven to 350. Spread 1 / 4 cup coconut on a baking sheet. Bake, stirring occasionally untillightly gold (6 min). Transfer to aplat and shelving, loosly cover with plastic wrap and store at room temp. Mix the Splenda, cornstarch and salt in heavy bottomed sauce pan. Gradually add milk, beating until cornmeal that has been dissolved. Cook over medium heat, stirring constantly until mixture reaches a boil. Place egg yolks in small bowl, whisk in about 1 / 2 cup milk mixture. Gradually mix egg mixture into the main pot, return mixture to a boil. Reduce heat to low and cook for 1 min-med is still breaking. Remove from heat and whisk in butter, vaniila, and coconut extracts. Then add the remaining cocnut. Pour the filling into the crust and upper Smoth. Place a piece of plastic wax paperor directly above the cake. Poke a few holes to let steam escape. Refidgerate at least 3 hours or overnight. Remove the wax paper, sprinkle with toasted cocnut and cut into wedges.
